Chicken Street has invented a unique concept of cheese naan bread made to order and reinvented according to customers' desires. The brand is enjoying growing success, with over 60 restaurants in France, Belgium, Morocco and Algeria. Mickaël Allard explains his decision to implement Inpulse to accelerate the achievement of franchisees objectives.

As founder Sufyan Renucci explains, support for franchisees is a major success factor for the brand: "The support we offer enables franchisees from outside the restaurant business to open their first restaurant, and even to develop a network later on and become a multi-franchisee or master-franchisee".

How can we structure ourselves to accelerate our franchisees' profitability?

"We've gone from 17 restaurants to 35 in year 2 and 60 today. It's an exceptional start to the year for Chicken Street, it's a peak that's just passed, we had anticipated well on the support functions at head office and we had to perfect the tools for the franchisees so that they can quickly reach their objectives.

Our role is to transmit reliable information to the entire network. We need to know how to collect data, and make it easily accessible so that it can be used by others. We benchmark the network, comparing restaurants so that a new franchisee can refer to another similar restaurant and learn from its best practices: average ticket, product mix, peak activity... With Inpulse, we accelerate this transmission of information: Inpulse helps to place the right supplier orders to avoid out-of-stocks and overstocks, and enables regular inventories and access to yield variances to improve franchisees' margins." "Ever since I took up my position as Director of Operations at Chicken Street, I'd been looking for the tools we had at McDonalds to help restaurants manage inventory and margins. The starting point was to quickly put an end to the error-prone and time-consuming Excel-based inventory and margin calculations. But above all, it was impossible for us to extract the difference between theoretical and actual margins, and to understand the disparities by dish. "I also wanted to be able to refine our action plans to improve raw materials management, and to do this, we need to analyze yield gaps to understand and focus our energy in the right place. We can support the franchisee and share best practices from other establishments."

How can we speed up onboarding and keep up the pace of our openings?

By the end of the year, Chicken Street's ambition is to reach 80-90 restaurants, with forthcoming openings in Dakar and Dubai in particular, with a view to passing the 100 mark in 2024. Such a pace requires the ability to rapidly onboard new franchisees:

"We tried to implement a tool that was difficult to configure, but after a few months we decided to change.
